Beef Salad Recipe That is Great For Sandwiches

This Beef Salad Recipe as another deli meat alternative for this month’s challenge. Because it uses freeze-dried ingredients it reduces plastic waste and is quick and easy to make.

As I mentioned in my Curry Chicken Salad recipe, I use Thrive Life* freeze-dried food which comes in BPA-free metal cans. Overall, metals have a better recycling record (recyclemetals.org) and that’s why I prefer them over plastics. Particularly in this case, the plastics from deli meats and cheeses can’t be recycled at all, making the metal cans an even better option.

About this beef salad recipe

This recipe came about because I was trying to find non-deli meat alternative besides chicken salad for my sandwiches. Don’t get me wrong, I love my curry chicken salad recipe! I just wanted a little more variation and Thrive Life has freeze-dried diced beef. Which got me thinking, I could have beef salad as an option if I could just find a recipe. As I was going through my recipe books, I noticed that beef, mustard, and mushrooms was a fairly common combo. I tried this with the beef along with some mayo and celery. The result was delicious! Especially if you add some cheese to the mix or melt it on top.

Beef Salad with Mushroom

This is a hearty beef salad that can be eaten in sandwiches or as a melt.

Ingredients

  • 1/2 cup Diced Beef (freeze-dried)
  • 2 tbsp Sliced Onions (freeze-dried)
  • 2 tbsp Celery (freeze-dried)
  • 1/4 cup Mushrooms (freeze-dried)
  • 1 tbsp Mayonnaise
  • 1 tbsp Mustard
  • 1/4 cup Cheese- shredded (optional)
  • parsley for sprinkling (optional)

Instructions

  • Assemble freeze-dried ingredients and add warm water to cover.
  • Allow FD ingredients to soak/rehydrate for about 15 minutes (or till tender)
  • Drain off any excess water from FD ingredients and add mayonnaise and mustard. Mix well.
  • If eating cold, add cheese and parsley with mayonnaise and mustard and mix well. Can be eaten as a sandwich, pita, or wrap.
  • If making a melt, place mixture on bread of your choice and sprinkle cheese and parsley on top. Melt the cheese using your preferred method.

Notes

A little mayonnaise goes a long way with this recipe.
Just a reminder, this recipe uses freeze-dried foods which are not the same as dehydrated. If you are using dehydrated ingredients you will need a much longer soaking process. Always follow the soaking process on your ingredients label.
