Easy Curry Chicken Salad

A quick and flavorful chicken salad featuring freeze-dried ingredients. This dish is great in sandwiches, wraps, or on a salad.

Ingredients

  • 1/2 cup Grilled chicken or regular (freeze-dried)
  • 1/4 cup Green peas (freeze-dried)
  • 2 tbsp Celery (freeze-dried)
  • 2 tbsp Mayonnaise
  • 1/2 tsp Curry powder
  • 1/4 tsp Garlic powder
  • 1 tsp Chives (dried)
  • 1/8 tsp Chili powder (More or less to taste)
  • 1/8 tsp Ground thyme (More or less to taste)

Instructions

  • Add all freeze-dried ingredients to a bowl and add warm water.
  • Let the ingredients rehydrate for about 10-15 minutes.
  • After chicken and veggies are rehydrated, drain off any excess water.
  • Shred the chicken by hand if you would like smaller chunks.
  • Add other ingredients to bowl and mix well.

Notes

Feel free to substitute fresh ingredients for the freeze-dried. Freeze-dried is not the same as dehydrated foods. If you are using any dehydrated ingredients you will need a much longer soaking time.
